Low Sodium Fruit & Nut Bread

What You Need..
1 1/2 cup Bread Flour (No Sodium Kind)
1/2 cup Golden Raisins
1/2 Cup Dates
1/2 cup pecans or walnuts chopped
2 eggs
1 teaspoon Low Sodium Baking Powder
1 tsp. Cinnamon
1 Tbs. Flieschmans Unsalted Margarine
1/4 cup water
Mix in a bowl you dates, nuys, raisins, and cinnamon. In another bowls whisk your eggs until yolks and whites are blended together good. Add you baking soda to the eggs and then whisk again. Add your egg mixture to the fruit and nut mixture and stir well with a fork. Add your flour to the mixture and continue to mix together with a fork. Your mixture will probably be two dry at this point so add you water and stir the mixture. Spoon mixture into a pre-sprayed bread pan and smooth out. Your mixture will be a bit thick and sticky looking. Bake in a 400º over for 25-30 minutes. During the last 10 minutes of baking, spread your pat of unsalted margarine over the top of the bread.
This is a thinner type loaf of bread which will be about 2 1/2 to 3 inches think
Very Low Sodium (Only Sodium comes from your baking powders so the amount will depend on the type of baking powder you use. ALWAYS read the sodium contents of items like baking powders when you buy them, Some can be very high and some are reasonable.
