Reduced Fat Low Sodium Berry Pancakes

What You Need....
1c - Bread Flour (0 sodium)
1 - medium egg
1t - zero sodium baking powder
1 1/2t - sugar or 1 packet splenda
1 tsp. coffee creamer
1 +c - water
Low sodium cooking spray (0 Sodium)
1/2 cup mixed berries frozen or fresh
Toppings
1 teaspoon powdered sugar
1 teaspoon mixed berries
DIRECTIONS:
In a bowl mix the flour, sugar, baking powder and creamer. Break the egg on top of the mixture and pour the water on top (start with 1 cup, you may need to add a little more). Stir until the egg is totally mixed in but try to leave the mixture lumpy. A too smooth of mixture makes for flat chewy pancakes. Add in your mixed berries
Cook on one side in a pre-sprayed fry pan on medium to high heat until you see the edges start to brown and air bubble rise through the pancake. Flip and cook until the other side starts to brown...ENJOY
